Pseudo Beef Chili

I made this yesterday and it turned out to be very tasty. I know that sometimes people post requests for recipes that will cut the fat and get more vegetables into a carnivorous spouse's diet. This is a great they'll-never-know-it's-not-beef recipe, and since the carrots are pureed, they won't know they're in the mix, either! Just keep 'em out of the kitchen while you're making it and they'll never be the wiser. ;)

Amount Measure Ingredient -- Preparation Method

12 ounces Morningstar Meal Starters Grillers -- 1 package
28 ounces diced tomatoes -- 1 large can
16 ounces pinto beans -- 1 can
28 ounces kidney beans -- 1 large can
1 cup carrots -- cooked
1 medium red bell pepper -- diced
1 medium yellow onion -- diced
1 can tomato sauce -- small can
2 tablespoons tomato paste
1 teaspoon cumin
1 tablespoon chili powder
1/2 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon dry mustard
2 tablespoons garlic -- chopped
1/2 teaspoon salt
freshly ground pepper -- to taste
1 dash ground ginger
1 tablespoon lemon juice
2 tablespoons ketchup
1/2 cup red wine
shredded cheddar cheese -- for garnish
corn chips -- Fritos, optional

Cook the carrots; drain. Mash.

Chop the onion and the red bell pepper. Rinse the pinto beans and the kidney beans very well.

Put all ingredients except the cheese and the Fritos in the crock pot. Stir well.

Cook on Low for 6 hours. Adjust seasonings as needed, and then let the chili sit in the fridge overnight so the flavors can meld.

Serve over Fritos and topped with cheese if desired.

NOTES : If you would like for this recipe to be sweeter and taste more like baked beans, you can add:

1 teaspoon brown sugar
1 drizzle of maple syrup, to taste
1/2 cup of Lapsang Souchong tea (adds smoky flavor)
