Recipe: Hungarian Goulash

Hungarian Goulash
6 - 8 servings

3 tablespoons of cornstarch (or flour)
2 teaspoons Hungarian sweet paprika
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dry mustard
2 lbs of stew beef cut into 1 inch cube (rump roast or chuck roast is also fine)
1/4 cup oil
2 medium onions, sliced (yellow)
2 garlic cloves, minced
1 10.5 oz can beef broth
1 6 oz can tomato paste
1 teasp. caraway seed
1 cup sour cream at room temperature
1/2 cup red wine for the pot

Combine cornstarch, paprika, salt, pepper, and mustard in a large plastic bag. Shake to mix. Add the beef, and shake to coat well.

Combine everything but the sour cream in the crock pot and cook for about 6 hours on Low. Then, stir in the sour cream and let simmer for about 30 minutes. Serve hot over freshly cooked noodles, (normally green noodles) or if you lack noodles, rice may be used in a pinch.
